This BLT Cobb salad is loaded with fresh and flavorful ingredients. It can be easily customized based on what you have in your fridge or pantry.
This salad is filling, full of texture and amazing flavor. It is a meal all on it’s own, but for a little something extra could easily be paired with The BEST Buttermilk Cornbread, Best Cheesy Garlic Bread, or Buttery Pull Apart Rolls.
What is a Cobb Salad?
An instant classic, the Cobb is a chopped salad made up of lettuce, hard-boiled eggs, chicken, bacon, avocado, cheese, tomatoes, and dressing. It is hearty and filling, and a little bit decadent as far as salads go.
Today’s recipe is one that we make ALL of the time, sometimes with grilled chicken and fried egg, but always the same mix of ingredients. I love how filling and flavorful it is, especially when you drizzle it with a bit of homemade ranch dressing. Yum!
It is big enough to feed two adults for dinner, although I totally wanted to eat more! We’ll definitely be making this one over & over again… I think you will too!
How to Make Cobb Salad
The cobb salad is super easy to throw together, I used ingredients we already had in our pantry and refrigerator. Simple & effortless.
GREENS. Toss some romaine and mixed greens together
PROTEIN. Add the chicken (we had leftover strips from the night before). Add hard boiled eggs. Throw in bacon bits (the only thing I actually cooked for this salad). Toss in cubed cheese (I used a really spicy cheese and it was SOOO good).
VEGGIES/TOPPINGS. Add corn (I used fresh corn, cooked the night before, but you could also used canned). Top with cherry tomatoes, avocado, green onion, and sunflower seeds
DRESSING. Dress with buttermilk ranch dressing.
Veggie Tips:
- Ripe avocado? A ripe avocado is black and slightly yields to pressure. It is overly ripe when it is totally black and overly mushy. If it is green it’s not ripe at all.
- What greens are included in “mixed greens”: baby romaine, oak leaf lettuce, swiss chard, mizuna, arugula, frisee, and radicchio
Recipe FAQ
Seasonings? A lot of your flavor will come from your choice of cheese and lettuce. For example you could use a sharp cheddar if that’s a flavor you enjoy, or a stronger cheese like feta or blue cheese would give a unique flavor profile. If you choose to use mixed greens, you will get more of a bitter flavor than if you used a more mild lettuce like romaine or spinach.
You can also add some flavor when you cook your chicken. If you choose to use crispy chicken, you can add whatever spices you want to the batter. For some heat, we love adding paprika or Tony’s Creole seasoning. If you use grilled chicken in your recipe, you will get that lovely charred taste.
How to make this healthy? You can use turkey bacon, a low fat salad dressing, grilled chicken, low fat cheese, and hard boiled egg whites. Cutting out any unhealthy fats is a great option. Avocados are good fats and should be fine to leave in the recipe.

BLT Cobb Salad Recipe
Ingredients
- 3 cup chopped romaine lettuce
- 3 cup mixed greens
- 4 slices cooked bacon
- 2 hardboiled eggs
- 1 chicken breast - grilled or crispy
- 1 avocado - diced
- 1 cup cherry tomatoes - halved
- 1/2 cup corn
- 1/2 cup cheddar or pepper jack cubes - I used Cabot's Habanero Cheddar
- 1/4 cup roasted sunflower seeds
- 3 green onions - sliced
Instructions
- To assemble the salad, place the greens in a large bowl (or two medium bowls) and top with remaining ingredients. Serve immediately with ranch dressing.

I love me a cobb salad. I will eat it any time of the year. I love that you can put just about anything in it. My favorite part of a cobb salad is the eggs and bacon. It just add so much flavor!
