These Apple Crisp Stuffed Apples are a deliciously creative dessert that combines two classics into one irresistible treat. Fresh apples are cored and hollowed out, then filled with a sweet, buttery mixture of oats, brown sugar, cinnamon, and spices, mimicking the topping of a traditional apple crisp. As they bake, the apples become tender and juicy while the filling turns golden and crunchy, creating the perfect balance of soft and crisp textures. Served warm with a scoop of vanilla ice cream and a drizzle of caramel sauce, apple crisp stuffed apples make a cozy, crowd-pleasing dessert that’s ideal for fall gatherings or holiday dinners.

Classic crisps like Strawberry Rhubarb, Blueberry, and Cranberry Apple are always a favorite. This fun twist—Apple Crisp Stuffed Apples—offers a new take that’s sure to delight the whole family!

Recipe Ingredients

Two stages of preparation: apples hollowed and filled with spiced apple chunks, then topped with a crisp crumble.

Apples – Crisp and slightly tart, apples provide a firm base for the filling. When coring, make sure to leave some of the bottoms intact. This prevents the apples from breaking open when transferring, as the bottoms soften during baking. Leave at least ¼ inch thickness at the bottom of each apple.

Filling – Sweet and spiced with a hint of cinnamon and nutmeg, the apple chunks soften and release their juices, creating a tender and flavorful filling.

Streusel Topping – Buttery, sweet, and slightly crunchy, the streusel topping adds a perfect contrast to the soft, spiced apple filling.

Variations

Oat Alternatives – If you don’t have old-fashioned oats, you can use quick oats, steel-cut oats, gluten-free oats, or oat flour as a substitute, adjusting the texture as needed.

Mix-Ins – Boost the filling with a handful of chopped walnuts, pecans, or dried fruit such as raisins or cranberries for extra texture and sweetness.

How to Make Apple Crisp Stuffed Apples

Step 1: Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Line a small baking sheet or 8×8-inch pan with parchment paper, foil, or a baking mat. Set aside.

Step 2: Cut off the tops of 4 apples. Using a knife, core the apples, creating a bowl. Using a spoon, dig out the inside. Peel and cut the remaining apple into 1/4-inch to 1/2-inch chunks.

Step 3: In a medium bowl, combine the apple chunks, sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt. Mix until combined. Spoon the filling into the apples.

Step 4: In a small bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, and salt. Cut in the cold butter using a pastry blender until small clumps form (pea size). Sprinkle the streusel over top.

Step 5: Place the apples onto the baking sheet or into the prepared pan. Place in the oven to bake for 30-40 minutes or until the crust is browned and the filling is bubbly (you may have to tent the tops with foil halfway through to prevent over-browning). Remove from the oven and allow to cool for 10 minutes before serving. Top with vanilla ice cream and caramel sauce, if desired.

Expert Tips

Perfectly Cored Apples – Use a melon baller or spoon to scoop out the top and inside of the apples to form a cavity. Alternatively, cut the apples in half and scoop out the core.

Make Streusel with Two Forks – If you don’t have a pastry blender, use two forks to cut the butter into the streusel. This simple step creates the same deliciously crumbly topping.
