Homemade Mexican Pizza
I hate to admit it, but when I was in middle school and high school I ate Taco Bell at least once a week! Things have definitely changed since then, but my love for Mexican pizzas is still going strong! That love has definitely transferred to my kids.
We probably have Mexican food once or twice a week. They are pretty quick to make, use lots of fresh ingredients, and delicious go to meals.
We make all sorts of “Mexican pizzas,” usually a meatless version with corn & black beans, however, I thought it would be fun to share my version of the fast food classic.
How to Make Mexican Pizza
These delicious cheesy pizzas are so fun!
I start by making the same ground beef recipe I use for my favorite tacos.
In a large skillet set over medium heat, brown beef and season.
Fry the tortillas over medium high heat in a bit of oil just until golden brown (they get really crisp and stay crisp, you can bake them too but it’s not quite the same). Transfer to a paper towel lined plate
Next it is time to layer:
- Refried beans
- Ground beef
- Second tortilla
- Enchilada sauce
- Toppings: tomatoes, cheese and green onions (we even added sliced olives to some too).
Pop them under the broiler for a few minutes until they get nice and bubbly on top, and then enjoy them straight from the oven and garnish with cilantro if desired.
You want to eat them while they’re still pretty hot. The longer they sit, the softer they’ll get, and you want your tortillas to be nice and crunchy, so gobble them up quickly!
How to make these healthier? These things are healthier when you add more of the healthier things like the tomatoes and olives and limiting the more unhealthy things like cheese and beans. But keep in mind this won’t help it taste super great. You could also use corn tortillas instead of flour tortillas cause corn tortillas are slightly healthier.
Other types of meat? In this recipe we used ground beef, you can use ground turkey or even chopped and pan cooked chicken bites. Whatever meat or even meat substitute that you decide to use we suggest that you continue to use some taco seasoning.
Variations? If you would like to you can change up a couple of different things in this recipe:
- Top with jalapenos
- Season the meat with different seasonings that you prefer
- Make your refried beans creamy or spicy
- Drizzle hot sauce and sour cream on top!
Storing Tips + Side Ideas
Mexican tacos should be a make to order recipe, because if you make more than you end up eating it’s really hard to store. You should be able to STORE all of the toppings in the fridge in separate air-tight containers.
The fried tortillas should be left at room temperature in a Ziploc bag. You can REHEAT the beans and meat in the microwave before adding it to the tortilla along with the cold ingredients.
You can PREP some things before hand, such as cutting the vegetables and grating the cheese. I would recommend that you cook the meat and warm the beans right before serving however so that they are hot and fresh.

Quick & Easy Mexican Pizza Recipe
- 1 lb ground beef
- 1 packet taco seasoning
- 2 tbsp vegetable or canola oil
- 8 soft taco flour tortillas
- 1 (15 oz) can refried beans
- 2/3 cup red enchilada sauce
- 2 small tomatoes - diced
- 1 (8 oz) block colby jack cheese
- 3 green onions - sliced
- sliced olives
- green chiles
- minced cilantro
- In a large skillet set over medium heat, brown beef and season.
- Meanwhile in a small skillet set over medium-high heat, add the oil. Fry the flour tortillas just until golden brown, transfer to a paper towel lined plate.
- Place four tortillas on a lined baking sheet. Spread tops with a layer of refried beans, then add the taco meat. Place the remaining tortillas over top, then spread with enchilada sauce and top with tomatoes, cheese, green onions (olives and green chilies if desired).
- Place into the oven and broil until the cheese is bubbly and begins to brown. Remove and garnish with cilantro, if desired. Serve hot.
