There is something about eating a strawberry cake pop that brightens my spirit. Sweet strawberry cake coated in a hard candy shell to be enjoyed any time of day! For my cake pops I use the Benty Cake Mold Set from Amazon. You guys I swear by this kitchen tool. No having to fumble with dipping cake balls or putting them on lollipop sticks. Plus, these cake pops come out perfect every time!

How to Make Strawberry Cake Pops

Step 1: Prepare your cake batter according to the package directions. Then bake in a cake pan in the oven until a toothpick comes out clean.

Step 2: After the cake has baked, place the cake in a separate mixing bowl or stand mixer with a paddle attachment and add 3 Tbsp of frosting. Note: You can do this while the cake is still warm. Mix the warm cake with the frosting until a cake pop dough forms.

Step 3: Then, using your cake pop dough fill each of the smaller cake pop molds scraping off any excess cake on top and then freeze for 15-30 minutes.

Step 4: While the cake is freezing in the mold, melt about 1 cup of pink candy melts with 1 teaspoon of shortening in a microwave safe bowl in your microwave in 15 to 30 second increments until smooth. The shortening will allow the consistency to be a little thinner and easier to work with.

Step 5: Then, remove the cakes from the freezer and pop them out of their mold. Then using the larger cake pop mold pour in the melted candy melts about halfway up the mold, add in the cake center and press down as far as you can so that the melted candy goes up and around the sides and top and then scrape any excess candy melts so that you can make an even pop in the mold.

Step 6: Place the mold in the fridge for 10-15 minutes to set.

Step 7: Once the pops are set, pop them out of the mold, decorate to your liking, and enjoy!

Expert Tips

Melting Your Candy Melts/Chocolate Melts: If you do not have a microwave or prefer not to use one you can also melt your candy melts in a double boiler over the stovetop.

Decorating Your Cake Pops: I recommend putting the cake pops on parchment paper over a wire rack or a lined baking sheet for a quick and easy clean up after decorating.

How should I decorate my Strawberry Cake Pops?

Be as festive and creative as you want when decorating your cake pops. I like using white chocolate chips or white candy melts to make a simple drizzle over the top. However other options I would recommend would be adding sprinkles, cake crumbs, or even flaky sea salt to the top.

What additional flavors can I add into my strawberry cake mix?

If you are wanting to enhance the overall flavor of your cake, here are some additions I would recommend. A teaspoon of vanilla extract. ½ a teaspoon of strawberry extract to increase the strawberry flavor. If you are adding more strawberry flavor, you might also want to add ½ teaspoon of baking powder to balance out the acidity. Also, if you want your cake to have a more vibrant coloring you can also add in a few drops of pink food coloring to brighten the cake.

Storage Information

These cake pops can be stored in an airtight container on your counter in room temperature for 1-2 days, or in your refrigerator for 1-2 weeks.

If you want to freeze these cake pops you can do so in an airtight container in your freezer for up to 2 months.
