Why We Love These Chocolate Covered Strawberries

  • The combination of rich chocolate and fresh strawberries creates a harmonious blend of sweetness and tartness.
  • This recipe is simple and quick to prepare.
  • With only two ingredients, it’s budget-friendly and accessible.

Recipe Ingredients

White and Dark Ghirardelli melting wafers.
  • Ripe Strawberries: These provide natural sweetness and a juicy, slightly tart texture.
  • Ghirardelli White or Dark Melting Wafers: These wafers offer smooth, velvety chocolate flavor and a glossy, firm texture upon setting. I also use these for the outer shell of my Red Velvet Cake Pops!

Expert Tips

  • Choosing the Perfect Strawberries: For the best Chocolate Covered Strawberries, select large, firm, evenly-shaped berries with a bright red color and a green calyx (green leaves) intact. Avoid blemished or underripe strawberries, and prioritize freshness by checking for mold or shriveling. Opt for strawberries with a sweet fragrance and, if possible, choose organic, locally sourced options for enhanced flavor and reduced pesticide exposure.
  • Perfect Dipping: Dip strawberries in warm, not hot, melted wafers to prevent scorching and softening. Swirl them gently to remove excess chocolate, place them on wax paper or a mat to set them at room temperature, and choose appropriately sized garnishes. You can use a Ziplock bag for decorative designs, no piping bag or tips needed!

Storage Info

To STORE Chocolate Covered Strawberries, place them in a single layer in an airtight container, separating each layer with wax paper to prevent sticking. These treats are best enjoyed within 24 hours to maintain their freshness and the desired texture.

If you dip them straight from the fridge, they’ll sweat as they warm up, creating a messy situation. Remember, there’s no need to refrigerate the chocolate-covered strawberries to set them, as they’ll naturally harden over time at room temperature.

    1. Yes.

To choose the best strawberries for making chocolate-covered strawberries, follow these tips:

      1. Size and shape: Look for large, firm, and evenly-shaped strawberries. This will make them easier to dip and will give a consistent appearance. Make sure they have a nice, bright green calyx (the leafy part) attached, as it helps in handling during the dipping process.

      2. Color and ripeness: Choose strawberries that are fully red, vibrant, and ripe, without any white or green spots. Overripe strawberries will be too soft, while underripe ones will lack sweetness and flavor. Avoid strawberries with any bruises or blemishes.

      3. Freshness: Select the freshest strawberries possible, as they will have the best texture and flavor. Check for any signs of mold or decay, and avoid those with a shriveled appearance.

      4. Fragrance: A sweet, fragrant aroma is a good indicator of a flavorful strawberry. Give them a sniff to ensure they have a pleasant smell.

      5. Organic and local: If possible, opt for organic strawberries to minimize exposure to pesticides. Local strawberries are usually fresher and may have better flavor compared to those that have been transported over long distances.

Greatest simple recipe for chocolate covered strawberries! Saved me a bundle. Worked perfectly the first time, and my guests loved them.

Microwave method (microwaving the dark chocolate tabs) is MUCH easier and involves less cleanup.
(I had overcooked the chocolate tabs at first using the double boiler method: the consistency changed, the components separated out, and the result hardened even when I applied more heat.)
