Expert Tips
- Hollow Out the Strawberries: Optional, but if you want to add more cheesecake filling to your strawberries you can use a small paring knife or melon baller tool to hollow out the centers of the strawberries.
- Use a Piping Bag for Precision: Spoon the cream cheese mixture into a piping bag or a resealable bag with a corner snipped off. Carefully fill the cavities of cored strawberries with the mixture. For added texture and flavor, dip the filled side of the strawberries into the crushed graham crackers to coat.

These came out fresh and creamy, like the easiest dessert you can pull together last minute.
This is so easy to make and very tasty!
How do you keep the frosting from sliding off the strawberries? This was an issue for me.
Hi Jennifer! It can be tough, especially because the strawberries don’t lay flat. If you pat the strawberries dry the frosting will stick better onto them. You can also let the frosting chill in the fridge for 10-15 minutes so it’s more firm.
Sorry but 2 cups of strawberries doesn’t cut with me when I’m trying to figure out how many strawberries I can make from this recipe. I want to give as gifts etc and plan on placing on trays etc. Now, I’ll have to make and figure it all out myself. Geez….
