Why We Love These Chocolate Covered Strawberries
- The combination of rich chocolate and fresh strawberries creates a harmonious blend of sweetness and tartness.
- This recipe is simple and quick to prepare.
- With only two ingredients, it’s budget-friendly and accessible.
Recipe Ingredients
- Ripe Strawberries: These provide natural sweetness and a juicy, slightly tart texture.
- Ghirardelli White or Dark Melting Wafers: These wafers offer smooth, velvety chocolate flavor and a glossy, firm texture upon setting. I also use these for the outer shell of my Red Velvet Cake Pops!

How to Make Chocolate Covered Strawberries
Step 1: Line a baking sheet with wax paper, parchment paper, or a silicone baking mat.
Step 2: Wash the strawberries and pat them completely dry.
Step 3: In a microwave-safe bowl, melt the desired melting wafers on half power for 30-second increments, stirring until smooth.
Step 4: Next, grab the strawberry by the stem and dip it into the melted chocolate. Lift directly above the bowl and gently swirl the strawberry in circular motions to remove excess chocolate.
Step 5: Then, place on the prepared baking sheet. Garnish if desired, then let set until firm, about 5-10 minutes.
Step 6: If using contrasting chocolate, drizzle, then garnish if desired. Let set until firm, about 5-10 minutes.
Step 7: Serve immediately, package for gifting, use as a garnish, or store until needed.
Expert Tips
- Choosing the Perfect Strawberries: For the best Chocolate Covered Strawberries, select large, firm, evenly-shaped berries with a bright red color and a green calyx (green leaves) intact. Avoid blemished or underripe strawberries, and prioritize freshness by checking for mold or shriveling. Opt for strawberries with a sweet fragrance and, if possible, choose organic, locally sourced options for enhanced flavor and reduced pesticide exposure.
- Perfect Dipping: Dip strawberries in warm, not hot, melted wafers to prevent scorching and softening. Swirl them gently to remove excess chocolate, place them on wax paper or a mat to set them at room temperature, and choose appropriately sized garnishes. You can use a Ziplock bag for decorative designs, no piping bag or tips needed!
FAQs
Popular chocolate flavor options include dark chocolate, milk chocolate, white chocolate, and even semi-sweet chocolate. You can also experiment with flavored chocolates like caramel, mint, or raspberry for unique twists.
You have two great options. In the microwave, pour wafers into a microwave-safe or a glass bowl and heat on half power for 30-second intervals, stirring until smooth. On the stovetop, use a double boiler set over medium-low heat and stir until smooth.
Chocolate Covered Strawberries are versatile. Use them as cake or cupcake toppers, create “flower” bouquets, or arrange them in a heart-shaped box.
Storage Info
To STORE Chocolate Covered Strawberries, place them in a single layer in an airtight container, separating each layer with wax paper to prevent sticking. These treats are best enjoyed within 24 hours to maintain their freshness and the desired texture.
If you dip them straight from the fridge, they’ll sweat as they warm up, creating a messy situation. Remember, there’s no need to refrigerate the chocolate-covered strawberries to set them, as they’ll naturally harden over time at room temperature.

Brilliant ideas , it’s 5.25 in the morning , and I’m making a birthday cake for my neighbour , just having a coffee , then I’m going to use your wonderful ideas to do chocolate strawberries on her cake . It’s such fun to do and they look soooo professional . Thank you .
I’m sure it will look beautiful!
A Valentine’s must!! These are so pretty & fun to make!
How do you make them , where they are not flat where you set them on the wax paper?
If you find a way, I’d love to know! There is always that little spot in the back.
I use a stick for pop cakes or a tooth pick grab a box lay paper towel or not stab the toothpick/pop cake stick thru the green leaves, dip it and pop it in the boxÂ
I use a Styrofoam block and bamboo skewers. The chocolate has to be the right temp. If it’s too warm it won’t set fast enough.. Swirl on the skewer until excess is off and stick it in the Styrofoam.
I absolutely love making chocolate covered strawberries! You have great tips to making them so pretty!
Chocolate covered strawberries are THE BEST! Such great tips. I am going to be making some this next month.
