Recipe Ingredients

A pot of creamy Cajun Chicken Pasta with rigatoni and diced chicken.

Seasoning – Cajun seasoning, garlic powder, paprika, salt, and pepper to season the chicken.

Bell Peppers – I used red bell pepper, but you can swap for green bell pepper, yellow, or a mix for a different flavor and color.

Broth – Use low-sodium chicken broth to build the base of the sauce.

Variations

Protein Additions – For a smoky twist, try andouille sausage or shrimp for a seafood vibe, both cooked with spices. Ground turkey is a leaner swap, while crumbled bacon adds crispy richness. Steak strips or pork tenderloin bring hearty, flavorful alternatives.

Homemade Cajun Spice – If you don’t have Cajun spice, mix cayenne pepper, paprika, white pepper, and garlic or onion powder to create your own blend, adjusting for heat and flavor.

How to Make Cajun Chicken Pasta

Step 1: Set a large pot or Dutch oven over medium heat, and add olive oil.

Step 2: Season cubed chicken with Cajun seasoning, salt, pepper, paprika, and garlic powder. Add to the pan and brown on all sides.

Step 3: Add bell pepper and onion, sauté for 1 minute, then add garlic. Sauté for 30 seconds.

Step 4: Pour in chicken broth and turn up the heat. Bring to a boil, then add the pasta. Cover and simmer for 8-10 minutes. Then, add spinach, milk, and cream cheese. Stir to combine, and simmer uncovered for 5 minutes, allowing the mixture to thicken.
