Hi, could I possibly use canola oil in place of the butter for this recipe? My brother and I are both lactose intolerant but I am determined to make these brownies due to the positive ratings in the comments!

There is a store here that makes the best dark chocolate brownies – They are almost mousse like in the centre. soft and moist with a crunchy outside. To die for. They wont give too much away. Says it may have something to do with the gluten free corn flour…Is the inside of the brownie moist and mousse like?
