Hi Amanda, I haven’t tried cutting back the sugar by that much, only 1-2 tablespoons, so I can’t really say. As far as a cast iron skillet goes, yes, you can use it! Just make sure it is large enough. This cornbread is pretty tall in a 9×9 pan. I would suggest at least a 9 or 10.25 inch skillet. Hope that helps!
