  • Sweet, classic vanilla flavor – With two teaspoons of pure vanilla extract, these muffins have a rich vanilla flavor that shines through without needing any additional mix-ins or toppings.
  • Soft and fluffy texture – Creaming the butter and sugar helps create a light, tender crumb, while whole milk adds richness and moisture to every bite.

Expert Tips

  • Avoid overmixing the batter – Once the flour is added, mix only until the ingredients are combined. Overmixing can develop too much gluten, resulting in muffins that are dense or tough instead of light and tender.
  • Fill and bake carefully – Fill each muffin liner about three-quarters full and bake until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the muffins cool in the pan for about 5 minutes before transferring them to a cooling rack.

FAQs

Can I use vanilla bean paste instead of vanilla extract?

Yes! Vanilla bean paste can generally replace vanilla extract in a 1:1 ratio. For this vanilla muffin recipe, use 2 teaspoons of vanilla bean paste instead of the vanilla extract. It will provide a rich vanilla flavor and may add little vanilla bean specks throughout the muffins.

Can I make Vanilla Muffins without a stand mixer?

Absolutely! You can use an electric hand mixer to cream the softened butter and sugar until light and fluffy. Once the flour is added, mix gently and avoid overmixing to keep the muffins tender.

Why did my Vanilla Muffins turn out dense?

Dense muffins can result from adding too much flour or overmixing the batter. Be sure to measure the flour using the spoon-and-level method, cream the butter and sugar properly, and mix gently once the dry ingredients are added.
