How to Make Banana Cottage Cheese Pancakes

Step 1: Add your banana to a large bowl and use a fork to mash until there are little to no lumps.

Step 2: Next, add the cottage cheese, eggs, and vanilla and mix until combined.

Step 3: Then, add the sugar, baking powder, and flour and stir until a batter forms.

Step 4: Preheat a skillet with canola oil on a medium heat. Once the oil is hot, fry the cottage cheese pancakes in your pan on each side until golden brown.

FAQs

Does my banana have to be ripe or browned?

Not at all! You can use any ripeness of banana you want, even a bright yellow one. The taste might be slightly different because ripe and over ripe bananas are sweeter than firmer bananas but they will all taste delicious!

What can I top my cottage cheese banana pancakes with?

I like to top my pancakes with some banana slices, a drizzle of maple syrup or honey. I also like to add fresh berries, nuts, or even a little sprinkle of cinnamon or powdered sugar for the kids.

Storage Information

You can store any leftovers of these Cottage Cheese Banana Pancakes allow them to cool to room temperature and then place them in an airtight container and store them in your fridge for 3-4 days. For longer storage you can freeze them in your freezer for up to 3 months.
