Hot Sauce – Frank’s RedHot is the classic choice, but any vinegar-based hot sauce will work. Look for one that’s bold but not overwhelmingly spicy.

Cayenne Pepper – Adds a controlled amount of heat to the flour mixture. If you like spicier wings, you can slightly increase the cayenne, but start small as it’s quite powerful.

Paprika – Regular sweet paprika is used to add a gentle depth of flavor and a hint of warm color to the coating.

Use Buttermilk for Marinating – For even juicier wings, marinate them in buttermilk for a few hours before coating and frying. This keeps the meat tender and adds a subtle tang.

Add a Touch of Honey to the Sauce – A small drizzle of honey can add a mild sweetness to balance out the spiciness without taking away from the classic flavor.

How to Make Hot Wings

Step 1: Add the flour, paprika, cayenne, salt, and garlic powder to a large zipper bag. Add the wings and toss to coat evenly with the flour mixture. Refrigerate until ready to cook.

Step 2: Add the oil to a heavy-bottomed pot, to a depth of about one inch. Heat the oil over medium heat to 375 degrees Fahrenheit (190 degrees Celsius).

Step 3: Fry the wings in the hot oil for 10-15 minutes, until golden brown and at least 165 degrees Fahrenheit (74 degrees Celsius).

Step 4: Drain on paper towels, then move to a medium bowl.

Step 5: To make the sauce, add the butter, hot sauce, pepper, and garlic powder to a small saucepan. Heat the sauce over medium heat, stirring frequently, until the butter is melted and the sauce is smooth.

Alternate Cooking Methods

Oven – We prefer frying them because that method gives the best texture. If you want to bake them, follow our oven-baked firecracker wings recipe.

Air-Fryer – Spray your air-fryer with non-stick spray and then line your air-fryer with the wings, without letting them touch. Cook them for 12 minutes at 360 degrees Fahrenheit (182 degrees Celsius).

Expert Tips

Room Temperature Wings – Let the wings sit out for 20–30 minutes before frying. If they’re too cold, the hot oil temperature drops too much, causing greasy, soggy wings.

Fry in Small Batches – Only fry 6–8 wings at a time (depending on pot size) so you don’t overcrowd and cool the oil. This keeps them crispy.

Set Wings on a Wire Rack for Draining – Placing wings on a wire rack instead of only using paper towels helps keep the bottoms crisp and prevents them from getting soggy.
