Everyone will love these potatoes and green beans! Warm potatoes and crisp green beans topped with simple yet flavorful spices come together to create a delicious side dish that pairs beautifully with any meal. I love that this dish requires only a handful of ingredients and only takes 40 minutes to make!

Fresh Green BeansCrisp green beans to add a delicious green vegetable to this side dish.

Baby Potatoes – I recommend baby yellow potatoes but you can use red potatoes, Yukon golds or any kind of potatoes you prefer!

How to Make Potatoes and Green Beans

Step 1: Preheat your oven to 400 degrees Fahrenheit and line a rimmed baking sheet with parchment paper.

Step 2: Rinse the potatoes and cut them into 1-inch cubes.

Step 3: Add the potatoes, oil, salt, pepper, oregano, and taco seasoning to a medium bowl and stir until everything is coated.

Step 4: Place the potatoes on a rimmed baking sheet and bake in your preheated oven for 15 minutes.

Step 5: Meanwhile, add the green beans to the same mixing bowl (no need to rinse it out) along with the oil, minced garlic, and salt and toss everything together.

Step 6: Then, remove the potatoes from the oven, add the green beans onto the baking sheet and bake everything for another 15-20 minutes until vegetables are soft.

Step 7: Finally, serve hot and enjoy!

If you want more flavors incorporated into this dish I recommend adding chopped bacon bits, onion slices, or other starches like sweet potatoes.

Storage Information

You can store leftovers of these green beans and potatoes in an airtight container in your fridge for 3-4 days. I would recommend not freezing this dish because the textures will come out grainy once thawed.

To reheat you can do so in the microwave or in a pot on the stovetop until everything has warmed through. I would recommend adding a splash of water or chicken broth to keep the vegetables from drying out.

  • 1 1/2 lbs baby yellow potatoes
