Monster Cookie Dough Energy Bites

If you’re anything like me I always need a post workout snack. Usually I go to the gym in the evening after the baby goes down for the night. So by the time I get home it’s pretty late and I’m in need of something that will tie me over until the morning. If it’s not a Greek yogurt then it’s usually a Kind Bar. But every once in a while my sweet tooth gets the best of me. That’s why I decided to make these monster cookie dough energy bites.

Monster Cookie Dough Energy Bites They’re made with ground up peanuts, peanut butter, rolled oats, flax seed, coconut oil, maple syrup and vanilla. Simple, natural and clean. Of course I had to go and ruin things by adding mini chocolate chips and mini M&Ms, but like I said, I’ve got a pretty big sweet tooth.

Monster Cookie Dough Energy Bites 1 All you need to do is toss the dry ingredients in a food processor, give it a whirl and then fold in the remaining ingredients. I rolled mine into little balls, similar to truffles or cookie dough before it gets baked, and then stored them in the refrigerator. They tasted great and made me feel a lot less guilty about eating a treat after working out. I can’t wait to experiment with other nuts and flavor combos- the options seem endless!

These monster cookie dough energy bites are egg-free and packed full of protein! Great little post workout treats without all of the sugar!

Ingredients
  • ⅔ c. old fashioned rolled oats
  • 2 tbsp. flaxseed meal
  • ½ c. dry roasted peanuts
  • ½ c. natural creamy or chunky peanut butter
  • 2 tbsp. coconut oil, melted
  • 2-3 tbsp. maple syrup (honey or agave)
  • 1 tsp. vanilla extract
  • ¼ c. mini chocolate chips and M&Ms, combined
Directions
  1. Place the dry roasted peanuts, oats and flaxseed in the bowl of a food processor. Grind until the nuts are smooth and the oats are relatively fine. Remove and place into a medium size mixing bowl.
  2. Add peanut butter, coconut oil, maple syrup, and vanilla. Stir until combined.
  3. Carefully fold in chocolate chips and M&Ms. Store in an airtight container in the refrigerator for up to 5 days.
Notes
-Peanuts and peanut butter can be substituted for almonds and almond butter.
