Breakfast Quesadilla

The best way to start your morning is with this Breakfast Quesadilla! It’s filled with eggs, cheese, protein all wrapped together inside a crispy tortilla.

A quesadilla for breakfast?

You might think that quesadillas are not a breakfast food which I completely understand, however, with breakfast burritos being all the rage these days I figured, why not try a breakfast quesadilla! Let me tell you, this easy breakfast quesadilla recipe has it all! Eggs, cheese, protein, all wrapped up in a tortilla to make the perfect all in one breakfast!

How to make a breakfast quesadilla

Ingredients for Breakfast Quesadilla

In a skillet over medium-high heat cook your sausage or bacon until browned and cooked through. Then remove from heat and set aside. You will want a little grease in the pan for your eggs but if there is a lot then be sure to wipe it up so that there isn’t too much.

In a small bowl whisk together the eggs, salt and pepper.

In the same medium skillet, pour in your whisked egg mixture. Cook over low heat until they are almost cooked, where you can tilt the pan and the eggs won’t run.

Then, add 2 Tablespoons of cheese on top of the eggs and place your tortilla on top of the cheese.

At this point the eggs and cheese should be sticking to the tortilla. Next, using a large spatula, flip the tortilla over.

Then add the other 2 Tablespoons of shredded cheese on top of the eggs and add your protein to one side of the tortilla.

Fold the tortilla in half and cook until the tortilla has a nice golden-brown color.

Finally, serve and enjoy!

What to serve with a breakfast quesadilla

If you have ever had a quesadilla before they are typically served with a bed of lettuce in the middle or on the side with a dollop of sour cream, guacamole, and Pico de Gallo. Personally I think all three of these would be great to serve with a breakfast quesadillas as well! Other items I would add on there to serve with would be avocado slices, and a side of salsa as well!

Recipe Variations

For this Breakfast Quesadilla recipe, it really is a solid base for any type of breakfast quesadilla you may want to make! Here are some additional options I would recommend!

Protein

For this recipe I have the amounts if you are wanting to use bacon or sausage. However, you could also use ham, tofu, or not have a protein if that is what you prefer.

Veggies

I don’t have any vegetables added to this recipe, but I will say that do like to add in onions and peppers to my breakfast quesadilla. But truthfully any veggies you want to add in to start your day would be a great addition to this recipe!

Cheese

I prefer cheddar cheese on my breakfast quesadilla, but you might prefer the more traditional quesadilla cheese or another type of cheese. Pick what you prefer best for your quesadilla!

Storage and Reheating

You can store this recipe in an airtight container in your fridge for 2-3 days. To reheat you can do so in your microwave until everything has warmed through. I would not recommend freezing this recipe.

Ingredients

  • 1 flour tortilla - 8 inches
  • 2 eggs
  • 1/4 cup cheddar cheese - grated
  • 1 Tbsp olive oil
  • salt and pepper to taste

Protein Options

  • 3 oz breakfast sausage
  • 2 slices of bacon
