I love fries. I mean who doesn’t? But I cannot eat fries everyday and try to maintain a healthy lifestyle at the same time, dang it. That is why I came up with these delicious carrot fries! They are crispy, soft fries that are coated in a flavor-filled seasoning, and just like my Zucchini Fries, you won’t remember that you are eating a vegetable. Plus, the whole family will love them!

Carrots have a natural sweetness to them, especially when they are cooked. This makes a good base for the fries.

Paprika is one of the heroes in this recipe. The smoky mild flavor is both rich and savory and really amps up these fries.

Parsley is one of those ingredients that can be very underrated. A lot of times you see parsley as a pretty topping for a dish, but in reality it is a clean and crisp earthy flavor that adds brightness to any recipe.

Can I use baby carrots for these carrot fries?

If baby carrots are all you have on hand then you definitely can use them. However I would strongly encourage using larger carrots since the carrots will shrink when baking.

What are good dipping sauces for carrot fries?

Honestly you can’t go wrong here! Any dip would be delicious with this healthy snack. Some I would recommend would be ranch, ketchup, mayo, my Avocado Dressing or any other dipping sauce!

How to Make Carrot Fries

Step 1: Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

Step 2: In a small bowl mix together the parsley, paprika, salt and pepper.

Step 3: Next, in a medium bowl toss your carrot fries with olive oil. Be sure the outside has a nice coating.

Step 4: Then sprinkle the spices onto your oil coated carrots and mix well.

Step 5: Spread the carrots onto your prepared baking sheet in a single layer and bake for 15 minutes. Be sure to flip the carrots halfway through cooking.

Step 6: Finally garnish with more fresh parsley, serve hot, and enjoy!

Storage and Reheating

You can store these carrot fries in an airtight container in your fridge for 2-3 days.

Similar to reheated French fries, reheated carrot fries lose that crispiness they had when they were fresh, so be mindful of this. To reheat, you can do so in your oven at 400 degrees Fahrenheit for 5-10 minutes. You can also reheat in an air fryer at 350 degrees Fahrenheit for 3-5 minutes. You can also reheat in the microwave until everything has warmed through.

When cutting your fries, keep in mind they will shrink while cooking in the oven, so cut them slightly larger than your desired size.
To STORE Carrot Fries leftovers, place them in an airtight container and refrigerate for up to 3 days. For longer storage, FREEZE them in a single layer on a baking sheet, then transfer them to a freezer-safe bag; they can be frozen for up to 1 month.
To REHEAT, bake in a preheated oven at 400 degrees Fahrenheit (200 degrees Celsius) for 10-15 minutes until heated through and crispy.
