Green beans are a go-to veggie in our home. It is one that everyone loves and everyone can agree on!
If we can mix things up or “jazz things up” a bit, then even better. Green Bean Almondine is just that. It’s a fancy veggie side dish that is sure to be loved by all (even the name is a little fancy).
This simple dish is perfect for dinner parties or holiday gatherings. It is dressed up enough to pass for a more formal gathering, but simple enough that it can be whipped up in a flash.
I used fresh green beans in this dish, that really adds to the flavor, texture, and more elevated dish. For an even better presentation, trim the green beans to the same length by cutting off the stems. This is a simple step that makes all the difference. Enjoy!!
How to make Green Beans Almondine
PREP. Cover the bottom inch of a large saucepan with water. Place a steamer basket inside, cover and bring to a boil. While the water heats, rinse the beans and then trim off any stems.
GREEN BEANS. As soon as the water starts to boil, turn the heat down to medium, add the beans and steam for 6-8 minutes, depending on whether you like your beans to be firm or soft. When done, briefly rinse the beans in cold water. Place the beans in a serving dish and set to the side.
ALMONDS. Place the nuts in a small sauté pan on medium-low to medium heat, stirring several times for 4 minutes or until lightly toasted. Don’t walk away from the stove -they burn fast. Add the butter to the pan along with the garlic and stir continuously until the butter melts, up to 30 seconds. Remove completely from heat.
COMBINE + SERVE. Pour the nut mixture over the beans and sprinkle on the onion powder, salt and pepper. Toss until well combined.

Storing Tips
STORE leftovers in an airtight container in the fridge for up to 2-3 days. Keep in mind if you have added lemon juice the color of the green beans will change to a duller green over time, but they will still taste delicious.
Cool leftovers completely, then FREEZE in an airtight container for up to 2-3 months.
Reheat green beans in a skillet with a little added butter or olive oil over medium heat, or warm in the microwave for 30 second intervals.
