Mango Pico de Gallo

Not your average Pico

Whenever I bring this dish over to someone’s house it is always a hit! There is a little bit of everything in this dish when it comes to flavors. The mangos are so fresh and sweet. Then you have the crispness of the red onion and red bell pepper. A hint of spice (which you can modify to your liking) from the jalapeno. And finally, the tanginess from the lime juice and there you have it, the perfect dip! All of the different elements truly make this Mango Pico de Gallo a winner for everyone.

How finely should I dice everything?

One thing I love about this dish is you can make it how you like it. I have had Pico where the chunks are really big and others where they are really small. For example, if I make it more as a dip, I try to get more finely diced so that you get all the flavors in every bite. Whereas, if I am going to use it as a topping for a dish then I make bigger chunks. So chop everything to how you prefer your pico!

Put it over your Protein

This recipe is a great topping for Chicken, Salmon, Tacos, any protein really! Because you have the crisp, sweet, tangy, and spicy flavors it really pairs exceptionally well with almost anything!

Storage Info

You can STORE this recipe in an airtight container in the fridge for 3-5 days. You can also FREEZE this dish in your freezer for 2 weeks. Be sure to thaw to room temperature before serving.
