Baked cauliflower pizza topped with pepperoni and black olives.

This Cauliflower Pizza Crust Recipe is a light, low-carb alternative to traditional dough that still delivers a delicious flavor and texture. Made with finely grated cauliflower, eggs, cheese, and simple seasonings, it bakes into a golden, slightly crispy base that holds up well to your favorite toppings.

I love pairing this pizza with my Best Ever Cheesy Garlic Bread, Fruit Salad, and Instant Pot Asparagus to make it a wholesome and well rounded meal.

Recipe Ingredients

Bowl of freshly riced cauliflower for cauliflower pizza crust.

Cauliflower – The star of the show in this pizza crust, keeping it low-carb and gluten-free!

Cheese – A boost of protein and flavor with mozzarella and Parmesan baked into the crust; it also helps it hold together.

Spices – Italian seasoning, salt, and pepper bring it all to life.

Variations

Almond Flour – Adding almond flour enhances texture and creates a slightly nutty flavor. It also adds structure to the crust, which is particularly useful for a firmer finish.

Coconut Flour – If you want a firmer crust, a small amount of coconut flour can help absorb extra moisture, giving the crust a sturdier base.

How to Make Cauliflower Pizza Crust

Step 1: Steam riced cauliflower in a microwave-safe bowl on HIGH for 8 minutes. Remove and set aside to cool.

Step 2: Line a small pizza pan or a baking sheet with parchment paper, and set aside. Preheat oven to 450 degrees Fahrenheit (232 degrees Celsius).

Step 3: Using a sieve, cheesecloth, or clean dish towel, press as much moisture as possible from the steamed cauliflower. In a medium mixing bowl whisk together the egg, Italian seasoning, salt, and pepper. Add cheese and cauliflower mixture, and mix until combined.

FAQs

What toppings go well with Cauliflower Crust Pizza?

Classic pizza toppings like fresh mozzarella, fresh basil, mushrooms, and tomatoes are always a hit. For added protein, try cooked chicken, pepperoni, or sausage. If you’re looking for something fresh, top with arugula, olives, oregano, and bell peppers after baking. Keep the toppings light to prevent the crust from becoming too soggy.

Do I need a food processor to make the crust?

A food processor is helpful but not essential. You can pulse fresh cauliflower florets to rice them quickly, or simply use a box grater. Pre-riced cauliflower from the store is another convenient option and works well in this recipe.

Storage Information

STORE Cauliflower Crust leftovers in an airtight container in the fridge for up to 3 days. REHEAT in the oven for a few minutes to maintain crispness.
