I love that I can satisfy the desire for pizza but in a healthier way. Cauliflower has built-in nutrients like vitamin K and vitamin C, it can help detox your liver, reduce high blood pressure, strengthens your immune system, and is high in fiber.

This is the perfect recipe if you are trying to watch your weight or avoid gluten.

How to Rice Cauliflower

There are two basic ways to make your own rice cauliflower.

You can use a food processor or use a cheese grater to grate the head of cauliflower.  You can use frozen cauliflower but you need to let it thaw first. 

You can also use store-bought, ready-made cauliflower rice. This is definitely the easiest way, but you will pay extra because ready-made cauliflower rice is a little more expensive than heads of cauliflower.

How to Make Cauliflower Pizza Crust

The Crust

  • Steam riced cauliflower in a microwave-safe bowl on HIGH for 8 minutes. Remove and set aside to cool.
  • Line a small pizza pan or a baking sheet with parchment paper set aside. 
  • Using a sieve or cheesecloth, press as much moisture as possible from the steamed cauliflower. Cheesecloth? You can buy a cheesecloth at just about any normal grocery store. The purpose of the cheesecloth is to extract all of the extra water from the cauliflower. Especially if you’re using frozen cauliflower florets or frozen cauliflower rice.
  • In a medium mixing bowl whisk together the egg, Italian seasoning, salt, and pepper. Add cheese and cauliflower, mix until combined.
  • Pour the cauliflower pizza “dough” into the middle of the prepared pan. Flatten with your hands until thin pizza crust forms (about 13-inches in diameter).

Bake

  • Place in a 450-degree oven and bake for 17-20 minutes, then remove and carefully flip over with a spatula and continue baking for 3 more minutes.
  • Top pizza base with sauce and toppings, then return to the oven to bake for 4-7 more minutes. Remove, slice and serve immediately.

Changing It Up + Storing

Omit the cheese:If you would like to make the crust without cheese that is totally fine, you can use an extra egg to help bind everything together. If you are wanting to bake a vegan version, omit the cheese and egg and use ground flaxseed and water to make a gluey binder. 

Toppings: Cauliflower crust pizzas are great as simple Margherita pizza or with any combo of veggies. Top them with any of your favorite pizza toppings, but be careful to not add to much sauce or cheese, it can cause the crust to become soggy.

Make it crispy: To get a crispy crust make sure that you bake it without any toppings at first, this way it has a chance to get some color on it.

 

You can make this pizza crust ahead of time but it is definitely better to be used right after being prepared. You risk the dough either drying out more or accumulating more water, which you have to squeeze out with a cheesecloth again.

 If you have leftovers of the unbaked dough keep it in the fridge for about 3 days.

To freeze this crust you should bake the dough first and then pop the finished crust into the oven when you’re ready to eat it , just to warm it through and then add the toppings to finish out the pizza.

  • 2 1/2 cup riced cauliflower - (or about ½ of a large head)
  • 2 tbsp egg - lightly beaten
